Since we bought our house we have tore many of these out of our yard. However the largest ones we have kept and we still have plenty! I used to despise them but after a dark winter I now appreciate their vibrant color outside my windows. It never occurred to me to use them as a flower arrangement until I saw my Mother-in-law do it this past weekend. It looks amazing!

Banana Pancakes with Maple Whip Cream

I thought well it's kind of boring that I post recipes that people have already come up with. So this one I kind of made up myself. Both Peter and I are banana junkies but as soon as one brown spot appears neither one of us seems to eat them. So I always let them go totally black and then come up with ways to use them. Peter loves to cook breakfast and is really good at it. So we have started to eat more breakfast for dinner, (my little trick to get him too cook dinner). So we came up with this!

  • 4 tablespoons butter
  • 1 1/2 cups whole wheat flour
  • 2 tablespoons sugar
  • 2 1/2 teaspoons baking powder
  • 1 small, very ripe banana, peeled
  • 1 cup milk
  • 2 eggs
  • 1/2 teaspoon vanilla extract 
Melt butter, let cool. Mix dry ingredients together in a bowl. Mash banana with fork and add the rest of the  wet ingredients to it along with the melted butter. Add wet to dry. For whipping cream just whip and add Maple Syrup while whipping (to taste).

I made up extra dry ingredients to have on hand and then wrote what was left to add on the jar for the hubby to make with or without banana.

I like these two videos because they were taken within minutes of each other but they are vastly different. One Isaac is focusing very hard on the toy aspect. The next it's all about the jumping and showing off for Mom. He loves the jumperoo except only when I am watching him. If I leave the room I hear little whimpers that turn into a full cry then I round the corner into his sight and he starts laughing and smiling. Aaah it begins already!

family time





This past weekend was packed with family, both sides.  Saturday was my Grandpa Lund's 80th Birthday. We went to Anthony's in Anacortes to celebrate and Isaac got to tag along. Peter's sister Kari and her family stayed with us and Sunday we celebrated Peter's sister, Marta's baby as he got blessed at their church. We also got the long awaited "cousin" photo with the two new additions.I can't wait for Isaac to be able to run around and trying keep up with the older cousins.
