Well ok as healthy as cookies can get. We like these cookies for several reasons, they are vegan, you don't need a mixer, and it requires ingredients we always have. Also Canola Oil is in the category of healthy oils just like Olive Oil. Peter probably makes these once a week and every time we have people over. We have Peter's mom to thank for the recipe.
1 cup whole wheat flour (white is also fine)
1 1/2 cup oatmeal (regular, not quick)
1 cup chocolate chips
1 cup walnuts
1/4 tsp baking soda
1/2 tsp salt
Mix well and then add:
1/2 cup canola oil
1/2 cup pure maple syrup
2 tsp water
2 tsp vanilla
1-2 spoonfuls of peanut butter (we use Adams)
Bake at 365 for 10-15 minutes
